Modartt has released version 2.0 of their remarkable physically modelled 
piano. This runs on Windows and Mac OS X, as both a standalone program that 
plays MIDI files or from a MIDI controller, and as a VST plugin.

I do not normally plug products, but I am happy to recommend this one.

The instrument has a real sustain pedal, models interactions between the 
soundboard and the string, and has many tunable parameters such that Modartt 
offers models of various historical pianos and pianofortes as well as 
marimbas, electric pianos, and so on. It does NOT sound quite like a 
recording of a real grand piano, at least not if one has heard the real 
thing in last few months; the attacks are a little too soft and the 
sustained tones are a little too sinusoidal and even. But it IS quite usable 
in places where otherwise one would require a real grand piano, especially 
with other sounds in the mix.

I find that playing with a MIDI controller the difference between say a 
SoundFont sampled piano, even one with many layers, is simply a no-brainer. 
It just seems more musical. I find it is possible to make a grander than 
normal piano by playing with the parameters.

I regularly use this thing with Csound, using the default preset which 
offers a good compromise on all the parameters.

The new verson has 2 bass strings and a better soundboard model, and the 
standalone version at any rate has a stereo output instead of just mono.
