Depends on the platform.  It used to be IRCAM on all, but became WAV
for PC and AIFF for Macs.

Current rule is: If the SFOUTYP environment variable is set to one of
AIFF WAV IRCAM or RAW that is default.  Otherwise it is WAV on all
except mac_classic or __MACH__ in which xcase it is AIFF
