I think the situation at the moment is, "it depends on the device."
The API for AudioFormat does have constants for quad, 5.1, 7.1:

However, I imagine most hardware just has a 1/8" stereo out. Some
devices may have HDMI output and if so, then you might be able to use
the other formats exporting audio out through there. (I don't have an
Android device with HDMI out, so I have never experimented to find
out).

The next version of Android, Android L, will add USB audio device
support for any device using Android L:

Hopefully that helps! To note, I don't think Csound for Android is
currently designed for support audio device selection. Perhaps someone
who has a device and has hardware support (whether HDMI or USB) can
take a look.
