If you are happy with MIDI then it is reasonably well supported.  
Check out the massign opcode to link MIDI channels to Csound
instruments.  There are opcodes to get the MIDI note number, velocity
and the like.

An alternative is the beats score language what is aimed at
traditional notation in a textual format.

I hardly ever use MIDI so I can not offer much help, but Welcome!
