I installed the double version on an "empty" computer (the hard disk was reinitialized and the account created from scratch). No sign of files there. I then installed the float version, and it went all right.
I also tried to install the double version on another MacIntel running 10.5.6 as an update from 5.0.8, but it did nothing (5.0.8. was still there).
I'm a bit confused...

The doubles installer is only finding the SupportLibs subpackage when it
opens. It appears to be a problem in the Csound5.pkg file which is looking
for subpackages named CsoundApps.pkg, CsoundLib.pkg, and SupportLibs.pkg but
the first two are actually named CsoundApps64.pkg, CsoundLib64.pkg in the
doubles installer.

Try double-clicking on each of the other packages and installing them one at
a time. That should work but will overwrite some of the float version's
files. If you find that the float version's CsoundLib framework is also
deleted by the doubles installer, I'd like to know.
