Some students at CCRMA apparently made some stompboxes out of BeagleBoards: https://ccrma.stanford.edu/wiki/Stompbox_2011 Maybe you should look there? If you haven't already, I would suggest looking at the PD mailing list archives. There have been some good discussions over there on the various Linux ARM devices.
