I'm not sure exactly how keyboards are put together, but it seems like it would be hard to shield them against contaminants/elements since the keys have to have such a huge range of motion.
I prefer the pad style interfaces myself and believe that they may be easier for you to ruggedize with a plastic overlay or something.
