There actually is a Csound API Reference document, which is included in the Windows installers. It errs on the side of overcompleteness, but everything that exists in the Java API is documented there, albeit as C or C++. Check out the documentation for the csound.h file, the csound.hpp file, the CppSound.hpp file, and the CsoundFile.hpp file.

Also have a look at the CsoundEditor Java example program.
